Who doesn't love a good pasta? When it has several ingredients, it becomes even more appealing. Pasta carbonara is a classic of Italian cuisine, known for its creamy and tasty sauce. Here is a delicious and authentic recipe for this classic and delicious dish for you to prepare:

Ingredients

  • 300 g of pasta (spaghetti, fettuccine, or other of your choice)
  • 150 g de bacon or pancetta, cut into small cubes
  • 2 large eggs
  • 1 cup (tea) of grated parmesan cheese (or pecorino romano), if you prefer)
  • 2 garlic cloves, finely chopped (optional)
  • Salt and pepper to taste.
  • Olive oil-olive oil (if needed)
  • Parsley, chopped, to decorate (optional)

Instructions

  1. Cook the pasta:
    • In a large pot with water and salt, and cook the pasta according to the package instructions, until al dente. Reserve 1 cup (tea) of water from the oven and drain the pasta.
  2. Get ready for the bacon/pancetta:
    • While the pasta cooking, heat a large skillet over medium-high heat. Add the bacon or pancetta and cook until crisp and golden brown. If you are using garlic, add it in the last few minutes of cooking the bacon, to release the flavour, but be careful not to burn yourself.
  3. To Prepare the sauce:
    • In a medium mixing bowl, beat the eggs and mix in the grated parmesan cheese. Season with a pinch of salt and plenty of pepper.
  4. Stir in the noodles:
    • Add the noodles, the green beans into the pan with the bacon, mixing well so that the pasta is well blended in with the fat out of the bacon. If the mixture is too dry, add a little of the reserved water from cooking pasta.
  5. To finish the sauce:
    • Remove the pan from the heat. Add the egg mixture and cheese in the pasta, whisking quickly to create a creamy sauce. The idea is that the residual heat from the pasta will cook the egg and melt the cheese, creating a sauce that's smooth and creamy. Add a little bit of the water out of the cooking, if necessary, to adjust the consistency of the sauce.
  6. Adjust the seasoning and serve:
    • Taste and adjust salt and pepper if needed. If you want to, finish with a drizzle of olive oil and parsley, chopped, to decorate it.
  7. Serve immediately- sprinkled with more parmesan cheese, if desired.
