Onion soup? Yes, onion soup. It may seem strange since onions have a very peculiar taste. But onion soup has become popular and has become a classic in the kitchen. Come learn how to make this different recipe to surprise your guests on that soup night!!

Onion soup

Ingredients:

  • 4 tablespoons butter
  • 2 tablespoons of olive oil.
  • 6 yellow onions, large, sliced thinly
  • 2 cloves of garlic, finely chopped
  • 1 tablespoon of sugar (optional, helps to caramelize onions)
  • 1 tablespoon all-purpose flour
  • 1 litre of beef stock (or chicken stock)
  • 1/2 cup dry white wine (optional)
  • 1 bunch of thyme (or 1/2 tsp. dried thyme)
  • 2 bay leaves
  • Salt and pepper to taste
  • 4 slices of bread (preferably baguette or ciabatta)
  • 1 cup of the cheese is Gruyère, grated (or swiss cheese)

Instructions:

  1. Caramelize the onions: In a large saute pan, heat the butter and oil over medium-high heat. Add the onions are sliced and garlic. Cook, stirring occasionally, until the onions are golden and caramelized, about 30-40 minutes. If you want to, then add in the sugar, to aid in the caramelization.
  2. Add in the flour: Sprinkle the flour over the onions, sugar and cook for a further 2 minutes, stirring all the time. This will help to thicken the soup.
  3. Deglacer of the pan: Add the white wine (if using) and cook, covered, for 2 minutes, scraping the bottom of the pan to loosen up the pieces, caramel.
  4. Add the vegetable broth, and seasonings: Add the beef stock, thyme and bay leaves. Bring to a boil, then reduce heat to low and cook, covered, for 20 minutes. Season with salt and pepper, to taste.
  5. Prepare the bread: While the soup is cooking, pre-heat the oven to 356 °F. Place the bread slices on a baking sheet and toast them in the oven until they are crisp, about 10 minutes.
  6. Finish the soup: Remove the bay leaves, and rosemary (if you're cool) to the soup. Taste and adjust the seasoning, if necessary.
  7. To serve: Divide the soup into bowls, wear-resistant furnace. Place a slice of toasted bread in each bowl, and top with a generous portion of grated parmesan cheese.
  8. Hard grating: Place the bowl in the oven (or you can use the grill, in the oven, and bake in the oven until the cheese is melted and golden brown, about 5 to 10 minutes. Serve hot.
