
Rice pudding, what a wonderful sweet treat. That sweet root that brings back fond memories of childhood and of a time that will never come back. Time will never come back, but we can keep this tradition alive to always remember where we came from. Rice pudding is a super traditional recipe that never goes out of style. Ingredients
- 1 cup white rice (preferably the type that is 1)
- 2 cups water
- 1 liter of milk
- 1 can of condensed milk
- 1/2 cup sugar
- 1 tsp. vanilla extract (optional)
- 1 cinnamon stick
- 1/2 cup grated coconut (optional, to give you a little bit more)
- Ground cinnamon (for dusting)
Preparation:
- In a medium saucepan, place the rice and water. Cook over medium-high heat until the water has evaporated almost completely and the rice is tender, about 15 to 20 minutes.
- Add the milk, condensed milk, sugar, and cinnamon stick to the pot with the cooked rice.
- Cook over medium-low, stirring frequently, until the mixture thickens and the rice is nicely creamy, about 20 to 30 minutes. Be careful not to let the sweet rice sticking to the bottom of the pan, and stir it frequently.
- If you're using it, you must add the vanilla extract and grated coconut. Stir to combine.
- Continue to cook for another couple of minutes, and all of the flavors to blend.
- Remove the pan from the heat and remove the cinnamon stick.
- Let the rice pudding to cool slightly before transferring it to the bowl, or individual bowls.
- Serve it warm or cold, sprinkled with ground cinnamon, to taste.
