
Ground beef pancakes are a delicious and versatile meal. We love it when recipes are super simple, with easy-to-find ingredients that can even be served as a main dish, like this pancake, which is a great option to serve on many occasions. Here is a simple and tasty recipe for you to prepare:
Ingredients
For the Dough for the Pancakes:
- 1 cup (tea) of wheat flour
- 1 cup (tea) of milk
- 2 eggs
- 1 tablespoon of oil or melted butter
- 1 pinch of salt
- 1 pinch of black pepper
For the Filling of the Minced Meat:
- 300 g of minced meat (duck or other meat of your choice)
- 1 small onion, chopped
- 2 cloves of garlic, finely chopped
- 1 medium tomato, finely chopped
- 1/2 red or green pepper, finely chopped
- 1/4 cup (tea) of green or black olives, chopped (optional)
- 1 tablespoon of tomato paste
- 1 spoon (tea) of cumin powder (optional)
- 1 spoon (tea) of paprika or paprika (optional)
- Salt and pepper to taste.
- 2 tablespoons (soup) of olive oil or olive oil
For the Sauce (optional):
- 1 cup (tea) of ready-made tomato sauce, or homemade
- Grated cheese (parmesan, mozzarella, or any other of your choice)
Instructions
Preparing the Batter for the Pancakes:
- In a large mixing bowlmix the flour, milk, eggs, oil (or butter), salt and pepper. Beat until the dough is smooth and no lumps. Let it sit for 10 to 15 minutes.
- Heat a non-stick pan over medium-high heat and lightly grease with a little oil or butter.
- Pour in a ladle of the batter in a very hot pan and spread it out to form a thin layer. Cook, covered, for about 1 to 2 minutes, or until small bubbles form on the surface and the edges begin to drop. Turn over and cook for a further 1 minute. Repeat with the remaining dough. Set aside.
Preparing for a Stuffing of Minced Meat:
- In a large frying panyou can warm up the oil, or olive oil over medium-high heat. Add the onion and garlic and sauté over medium heat until they are soft and golden brown.
- Add the ground beef, and cook it until it is completely golden brown, breaking up the chunks with a spoon.
- Make the tomato paste and red pepper and cook it for another 5 minutes, until the tomatoes begin to break.
- Add the tomato paste and toss to coat. If you are using black olives, cumin or paprika, add at this stage.
- Season with salt and black pepper the like. Cook for a few more minutes, until the mixture is well incorporated and the liquid has evaporated.
Assembly:
- Fill each pancake with a generous amount of the filling of the minced meat. Roll up the pancakes and place them on a baking sheet.
- If you want, cover it with tomato sauce and sprinkle with the grated cheese.
- Bake them in the oven preheat at 356 °F for 15 to 20 minutes, or until the cheese is melted and golden brown.
- Pull it out of the oven and then let it cool down for a few minutes just before serving.
