Ingredients:

  • 1 kg of chicken cut into pieces
  • Juice of 1 lemon
  • 3 tablespoons of olive oil or oil
  • 1 medium onion, chopped
  • 2 chopped garlic cloves
  • 2 tomatoes, skinned and seeded, chopped
  • 1 chopped green pepper
  • 2 cups (tea) of washed and drained rice
  • 1 teaspoon saffron or turmeric
  • 1 bay leaf
  • Salt and pepper to taste.
  • 4 cups (tea) of hot water
  • Green onions (parsley and chives)

Directions:

  1. Marinate the Chicken:
    • Season the chicken pieces with lemon juice, salt and black pepper. Let marinate for at least 30 minutes so that the seasonings penetrate the meat well.
  2. Browning the Chicken:
    • In a large pan, heat the olive oil or oil and brown the chicken pieces on all sides until golden brown.
  3. Sauté the Seasonings:
    • Add the chopped onion and garlic to the pan and sauté until translucent.
    • Add the chopped tomatoes and peppers, sautéing for a few more minutes until the tomatoes begin to break down.
  4. Add the Rice and Seasonings:
    • Add the washed and drained rice to the pan, stirring well so that the grains are coated in the sauce.
    • Add the saffron, bay leaf, salt and black pepper to taste.
  5. Cooking the Galinhada:
    • Add hot water to the pan and mix well.
    • Cover the pot and cook over medium-low heat for about 20 to 25 minutes, or until the rice is cooked and the chicken is tender. Add more water if necessary during cooking.
  6. Finish and Serve:
    • Turn off the heat and leave the pan covered for a few minutes so that the rice finishes steaming.
    • Before serving, sprinkle chopped parsley on top to add freshness and flavor.

Tips:

  • For a more intense flavor, you can add vegetables such as sliced carrots or frozen peas along with the rice.
  • If you prefer looser rice, use long-grain rice and avoid stirring excessively during cooking.
  • The galinhada can be accompanied by a fresh green salad and butter farofa to complement the meal.

Regional Variations:

  • Goiana Chicken Stew: In Goiás, it is common to add pequi to galinhada, giving the dish a characteristic and striking flavor.
  • Minas Gerais Chicken Stew: In Minas Gerais, galinhada can be enriched with various vegetables and served with white rice on the side.
