  • 1 cup (tea) of standard Minas cheese or grated Parmesan (optional, but gives a salty and creamy touch to the cake)
  • 1/2 cup (tea) of grated coconut (optional, to give a more tropical flavor and texture)

Directions:

  1. Prepare the dry ingredients: In a large bowl, sift together the cornmeal, wheat flour (if using), sugar, and salt. Stir well so that the ingredients are well mixed.
  2. Mix the liquid ingredients: In another bowl, beat the eggs with the oil (or melted butter) until well incorporated. Then add the milk and vanilla essence (if using). Mix until you get a homogeneous mixture.
  3. Combine dry and liquid ingredients: Gradually add the dry ingredients to the liquid mixture, stirring well to avoid lumps. The batter will be more liquid than that of a traditional cake, which is normal and will ensure the creaminess of the final result.
  4. Add cheese and coconut (if desired): If you choose to add shredded cheese and/or coconut, mix them into the batter, stirring gently until incorporated. The cheese, in particular, will add a creamy texture and wonderful flavor to the cake.
