Ingredients:

  • 2 eggs
  • 1 cup oat flour (or almond flour for a gluten-free version)
  • 1/4 cup 100% cocoa powder (unsweetened)
  • 1/2 cup natural sweetener (such as stevia or xylitol, or honey if you prefer)
  • 1/4 cup coconut oil (or other vegetable oil of your choice)
  • 1/2 cup skim milk or plant-based milk (almond, coconut, oat)
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla essence
  • 1 pinch of salt
  • 1/4 cup chopped dark chocolate (optional, but it will make the cake even tastier!)

Directions:

  1. Preparing the Ingredients: Start by preheating the oven to 180°C. Grease a cake pan (it can be round or rectangular) with coconut oil and lightly flour it with oat or almond flour.
  2. Mixing the Liquid Ingredients: In a bowl, beat the eggs with the sweetener until you get a smooth mixture. Add the melted coconut oil (or other vegetable oil), milk and vanilla essence. Mix well.
  3. Adding the Dry Ingredients: In another bowl, sift together the oat flour, cocoa powder, baking powder, and pinch of salt. Mix well to ensure the dry ingredients are evenly distributed.
  4. Mixing It All Up: Gradually add the dry ingredients to the wet mixture, stirring well until a smooth dough forms. If desired, add chopped dark chocolate to the dough for an extra touch of flavor.
  5. Baking the cake: Transfer the batter to the greased pan and bake for approximately 25 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Baking time may vary depending on the size and type of pan, so keep an eye on the doneness.
