Ingredients
- 1 kg de flank steak

- 4 medium potatoes, peeled and cut into cubes

- Parsley, chopped, to decorate (optional)
Instructions
- Create a flank steak salt and pepper to taste.
- Heat the oil in olive oil in a large pot or a pressure cooker over medium-high heat.

- Remove the meat from pot and set aside.
- In the same panadd the onion and garlic. Sauté over medium heat until the onion is soft and golden brown.
- Embed tomatoes and with the bell pepper, finely chopped. Cook for a few more minutes, until the tomatoes begin to break.
- Add the tomato paste and the wine (if using). Stir well and cook, covered, for 2 to 3 minutes.
- Return to flank steak to the pan, and then add the beef broth, bay leaf, cumin, and paprika (if using). Stir to combine.
- If you are using the pressure cooker.: Put the lid on the pan and cook, covered, for about 40 minutes after the onset of stress.If you're using a pan, the common: Place lid on cooker and cook on low heat for about 2 hours, or until the meat is tender and falls apart easily. Add a little more broth or water if necessary during cooking to ensure that the meat is well-hydrated.
- Add the sweet potatoes and carrots for the cooking pot. Cook, covered, for 30 minutes more, or until the vegetables are tender, and the sauce has thickened.
- Adjust the salt and black pepper as you like it.
- Garnish with chopped parsley to serveif you wish, before serving you.
Tips
- If the sauce is too liquid, you can leave it in the pan, uncovered in the last few minutes of cooking to reduce and thicken the sauce.
- Serve it with rice, mashed potatoes or freshly baked bread for a complete meal.
