Ingredients (for about 15 pieces)
- 1 can of condensed milk (395 g)
- 100 g semi-sweet chocolate (50% to 70% cocoa), chopped or in drops
- 1 heaped tablespoon of unsalted butter
- 1 tablespoon heavy cream (optional - for a creamier texture)
- Belgian chocolate sprinkles, chocolate shavings or gourmet confectionery for rolling
Preparation:
1. mix the ingredients:
- In a heavy-bottomed saucepan, add the condensed milk, butter and chopped chocolate.
- Bring to the boil lowstirring constantly with a silicone spatula or wooden spoon.
2. Cook with patience:
- Stir constantly, scraping the bottom and sides of the pan well so that it doesn't stick or burn.
- The ideal point is when the dough completely detaches from the bottom of the pan and forms a denser "block". 10 to 15 minutes.
3. Finishing the dough:
- If you want an even creamier texture, turn off the heat and stir in the cream.
- Transfer the dough to a greased dish and cover with plastic wrap (in contact with the jam) so that no crust forms.
- Refrigerate for at least 4 hours to firm up.
4. Roll up and decorate:
- With lightly buttered hands, roll up the brigadeiros and coat in the gourmet confectionery.
