Sequilhos are delicious and crunchy cookies, ideal to accompany coffee or tea. These sequilhos are perfect for a snack or to accompany a hot drink. They are simple to make and delicious! I hope you enjoy the recipe. Here is a simple and tasty recipe for homemade sequilhos:

Ingredients

  • 1 cup butter (or margarine), at room temperature
  • 1 cup sugar
  • 2 egg yolks
  • 1 teaspoon vanilla extract
  • 2 1/2 cups wheat flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Crystal sugar (for sprinkling)

Preparation:

  1. Preheat the Oven:
    • Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Prepare the Dough:
    • In a large bowl, beat the butter and sugar until light and fluffy. This should take about 2-3 minutes.
    • Add the egg yolks, one at a time, beating well after each addition. Mix in the vanilla extract.
    • In a separate bowl, sift together the flour, baking powder and salt.
    • Gradually add the dry ingredients to the butter mixture, stirring until the dough is well incorporated and smooth.
  3. Shape the Sequilhos:
    • Using a teaspoon or small ice cream scoop, shape the dough into balls and place them on the prepared baking sheet.
    • Flatten each cookie lightly with a fork or the palm of your hand to form discs. Sprinkle a little granulated sugar on top of each cookie for a crunchy, sweet finish.
  4. Bake the Sequilhos:
    • Bake in the preheated oven for 10-15 minutes, or until the sequilhos are lightly browned around the edges. They should be firm to the touch but still soft in the center.
  5. Let it cool:
    • Remove the sequillos from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Tips

  • Texture: If you prefer crispier sequilhos, let them bake a little longer until they are golden brown all over.
  • Variants: Try adding lemon or orange zest to the batter for a citrusy twist, or chocolate chips for extra flavor.
