Few recipes are as practical and tasty as the classic oven-roasted chicken drumstick. Versatile, economical and full of flavor, this noble part of the chicken has the advantage of being naturally juicier, making it a sure choice for everyday meals or special dinners.

With a simple marinade and a good amount of time in the oven, the result is meat that is tender on the inside, with crispy skin and golden on the outside. And the best part: the oven does almost all the work for you.

Ingredients

  • 1 kg of chicken drumstick (with or without skin, to taste)
  • 3 cloves of chopped garlic
  • Juice of 1 lemon or 2 tablespoons of vinegar
  • 2 tablespoons of olive oil
  • 1 tsp. sweet paprika or smoked
  • 1 tsp. oregano
  • 1 tsp. salt
  • 1/2 teaspoon black pepper
  • 1 bunch of fresh rosemary (optional)
  • 1 sliced onion (optional, to roast together)
  • Potatoes, carrots or other vegetables (optional, as a side dish)

Preparation:

1. Season the chicken

In a large bowl, mix together the garlic, lemon juice, olive oil, paprika, oregano, salt and pepper. Place the drumsticks and coat them well in the seasoning. Cover and refrigerate for at least 1 hour (the longer, the more flavor).

2. Pre-heat the oven to

Heat the oven to 200 °C. Grease a baking sheet or line it with baking paper or aluminum foil.

3. Assemble the baking sheet

Place the drumsticks skin side up. If you like, add slices of onion and vegetables around them, they roast in the seasoning and are delicious.

4. Bake in the oven until it's golden brown

Bake for about 45 to 60 minutesor until the chicken is golden on the outside and fully cooked on the inside. If you want a crispier skin, increase the temperature to 220 °C for the last 10 minutes.

5. Serve hot

Remove from the oven, sprinkle with fresh rosemary and serve with rice, salad, mashed potatoes or roasted vegetables.

Master tips

  • For more flavor: Make holes in the meat before marinating so that the spices penetrate better.
  • For crispy skin: Do not cover with aluminum foil during the entire time in the oven. Leave it uncovered for the final few minutes.
  • Seasoning variations: Use curry, mustard, chimichurri, honey and soy sauce to create new versions.
