Ingredients
For the ribs:
- 1.5 kg of pork ribs (preferably, ask the butcher to clean and remove the membrane)
- 2 tablespoons olive oil
- 1 tablespoon of salt
- 1 tablespoon black pepper
- 1 teaspoon paprika (smoked or sweet, depending on your preference)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin
For the barbecue sauce:
- 1 cup ketchup
- 1/2 cup apple cider vinegar
- 1/2 cup brown sugar
- 1/4 cup Worcestershire sauce
- 2 tablespoons honey
- 1 tablespoon mustard
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cayenne pepper (optional, if you like it spicy)
- Salt and pepper to taste
Instructions
- Prepare the ribs:
- Preheat oven to 150°C.
- In a small bowl, combine salt, black pepper, paprika, garlic powder, onion powder, and cumin.
- Rub this mixture all over the surface of the ribs.
- Place the ribs on a baking sheet lined with aluminum foil. Drizzle with olive oil.
- Cover the baking sheet with aluminum foil and bake for 2 hours. Cooking time may vary depending on the size of the ribs, so check to see if the meat is tender and starting to fall off the bone.
- Prepare the barbecue sauce:
- In a medium saucepan, combine the ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, honey, mustard, paprika, garlic powder, onion powder, and cayenne pepper (if using).
- Cook over medium-low heat, stirring occasionally, until the sauce begins to thicken and the flavors blend, about 15-20 minutes.
- Adjust seasoning with salt and pepper to taste. Remove from heat and set aside.
- Finishing the ribs:
- After 2 hours in the oven, remove the ribs from the baking tray and generously brush the barbecue sauce over the entire surface of the meat.
- Increase the oven temperature to 200°C and return the ribs to the oven without covering with aluminum foil.
- Bake for another 20-30 minutes, brushing with more barbecue sauce every 10 minutes, until the ribs are caramelized and a little crispy on the outside.
- To serve:
- Remove the ribs from the oven and let them rest for a few minutes before cutting.
- Serve with the remaining barbecue sauce on the side for those who want more sauce.
