Ingredients

  • 1 piece of sirloin (approximately 1kg)
  • 2 tablespoons of olive oil.
  • 4 cloves of garlic, minced or crushed
  • 1 tablespoon mustard (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried or fresh rosemary (optional)
  • Juice of 1 lemon

Preparation

1. Preparing the Maminha

Start by removing the beef from the refrigerator and letting it sit for 15 to 20 minutes at room temperature before cooking. This will help ensure more even cooking.

Then, make some shallow cuts in the fat of the brisket, forming a network (cross-shaped cuts). This helps the fat to melt during cooking, giving the meat a delicious crunch and an even more intense flavor.

2. Seasoning the Sirloin

In a small bowl, combine the olive oil, minced or crushed garlic, mustard (if using), salt, black pepper, and rosemary. Stir well until the ingredients are well incorporated.

Using this mixture, rub the seasoning all over the surface of the brisket, making sure all sides are well coated. If possible, marinate for at least 30 minutes so that the seasonings penetrate the meat well, but if you are in a hurry, you can roast it immediately.

Lemon juice can be added to add a touch of freshness and help tenderize the meat, so add it to the marinade or directly onto the piece before placing it in the air fryer.

3. Preheating the Airfryer

Before placing the beef in the air fryer, it is important to preheat the appliance. Set the temperature to 200°C and let it heat for 3 to 5 minutes.

4. Roasting the Sirloin

Place the beef tenderloin in the air fryer basket, fat side up, so that the fat melts and permeates the meat during the roasting process. Make sure that the meat has enough space for air to circulate around it, which will ensure more even cooking.

Roast the brisket at 200°C for about 25 to 30 minutes, depending on the size of the piece and the desired doneness. For rare meat, 25 minutes may be enough, while for more well-done meat, the time can be extended. It is a good practice to turn the meat halfway through cooking to ensure that it cooks evenly.

5. Finishing

After the cooking time, remove the brisket from the air fryer and let it rest for about 10 minutes before slicing. This helps redistribute the juices in the meat, ensuring that it remains juicy and tender. When slicing, always cut against the grain of the meat to ensure a more tender texture.

Tips for Perfect Sirloin in the Airfryer

  • Internal temperature: If you have a meat thermometer, you can use it to ensure that the meat is cooked to perfection. For medium-rare, the internal temperature should be around 60°C. For rare meat, 50°C is sufficient, while for well-done, aim for a temperature of 70°C.
  • Marinade: If you have more time, let the meat marinate for 2 to 4 hours or even overnight. This will intensify the flavor and make the meat even more tender.
  • Variety of spices: The beef is delicious with a variety of seasonings. In addition to rosemary, you can experiment with thyme, oregano or even different peppers, such as Calabrian pepper or black pepper.
  • Fat crust: During cooking, if you notice that the fat is not browning as desired, you can increase the temperature to 220°C in the last 5 minutes of cooking to help create a crispy crust.
