Creamy cornmeal cake is a true delicacy of Brazilian cuisine. With its soft texture, remarkable flavor and light touch of creaminess, it's perfect for any occasion, whether it's breakfast, a snack or even dessert. And best of all: this recipe is super simple and quick to make in a blender, without losing the traditional taste!

Ingredients:

  • 1 cup cornmeal
  • 1 cup wheat flour
  • 1 cup sugar
  • 1/2 cup oil (can be soy, sunflower or coconut)
  • 3 eggs
  • 3 cups of milk (can be whole, lactose-free or vegetable milk)
  • 1 tablespoon baking powder
  • 1/2 cup grated Parmesan cheese (optional, but adds creaminess)
  • 1 pinch of salt
  • 1 teaspoon vanilla essence (optional, for a special touch)

Directions:

  1. Preparing the dough: Put the eggs, sugar, oil and milk in a blender. Blend for about 2 minutes until everything is well blended and the mixture is homogeneous.
  2. Adding the Secos: Then add the cornmeal, wheat flour, Parmesan cheese (if using), vanilla essence and a pinch of salt. Beat again for another 2-3 minutes until the dough is very smooth. The cornmeal will give the cake its typical texture, while the cheese will provide the creaminess that makes this cake special.
  3. Incorporating the yeast: Finally, add the baking powder and pulse the blender for a few seconds, just to mix the yeast into the dough. The baking powder will ensure that the cake rises and becomes fluffy.
  4. Baking the cake: Grease a pan with a diameter of about 24 cm with butter and flour or, if you prefer, use baking paper. Pour the cake batter into the greased tin and bake in a preheated oven at 180°C for around 30 to 40 minutes. The time may vary depending on the oven, so to test if the cake is ready, stick a toothpick in the center. If it comes out clean, the cake is baked!
  5. Serving: Remove the cake from the oven and let it cool a little before unmolding. The creamy cornmeal cake is even better served warm, but it's also delicious cold. It can be served plain or with a sugar and cinnamon icing, like the traditional farmhouse cornmeal cake.

Tips:

  • If you like a creamier cornmeal cake, you can add 1/2 cup of condensed milk to the batter. This makes the cake even more moist and tasty.
  • For a special touch, you can add pieces of guava to the dough, creating a delicious combination of cornmeal and guava.
  • Parmesan cheese is optional, but it adds a unique creaminess. If you don't want it, you can simply omit it.
