Who said that omelets always have to be salty? sweet omelet with whey and red fruits It is an innovative, healthy and delicious option for breakfast or post-workout. Rich in protein and full of flavor, this recipe combines the lightness of eggs with the nutritional value of whey protein and the fresh and antioxidant touch of red fruits.

Ideal for those following a low carb, ketogenic diet or simply looking for a protein and functional snack.

Ingredients

  • 2 whole eggs
  • 1 scoop (30g) of whey protein (vanilla or neutral flavor)
  • 1 tablespoon of milk (can be vegetable)
  • 1 teaspoon sweetener (xylitol, erythritol or stevia, optional)
  • 1 pinch of cinnamon (optional)
  • 1/2 cup berries (strawberries, blackberries, blueberries or raspberries, fresh or frozen)
  • Coconut oil or butter to grease the pan

To serve (optional):

  • Plain or Greek yogurt
  • Peanut or almond butter
  • Seeds (chia, flax, etc.)

Preparation:

  1. In a bowl, beat the eggs well with the whey, milk, sweetener and cinnamon, until you obtain a homogeneous mixture.
  2. Heat a non-stick frying pan over low heat and grease with a little coconut oil or butter.
  3. Pour the mixture into the pan and cover. Cook for about 3 to 4 minutes or until set.
  4. Distribute the red fruits on top of the omelette (you can fold it in half, like a crepe, or leave it open).
  5. Serve warm, with yogurt or a drizzle of peanut butter on top, if desired.
