Ingredients
- 500 gm chicken breast, cut into cubes
- 1/4 of a cup (of tea) in sesame oil (or vegetable oil)
- 1 large onion, peeled, cut into small cubes
- 1 red bell pepper, cut into small cubes
- 1 green bell pepper, cut into small cubes
- 1 medium carrot, peeled, cut into thin rings
- 1/2 cup (tea) of peanuts, roasted
- 2 cloves of garlic, finely chopped
- 1 small piece of ginger (about 1 cm), finely chopped
- 1/4 cup (tea) of soy sauce (shoyu)
- 2 tbsp oyster sauce (optional)
- 2 tablespoons of corn starch
- 1/4 cup (tea) of water
- 1 spoon (tea) of sugar
- Salt and pepper to taste.
- 1/2 spoon (tea) of the oil from the sesame seeds toasted (optional)
- Chives, chopped, to decorate (optional)
Instructions
- To Prepare the chickenIn a separate bowl, add the cubed chicken with salt and pepper.
- Pre-heat the sesame oil in a wok or large frying pan over medium-high heat.
- Add it to the chicken to the wok and stir-fry until it is fully cooked and golden brown, about 5 to 7 minutes. Remove the chicken from the wok and set aside.
- In the same placeadd a little more oil if necessary. Add onion, red pepper, green pepper, and carrot. Stir-fry for 3 to 4 minutes, until the vegetables are slightly tender, but still crunchy.
- Add the garlic and ginger to the wok and cook for 1 more minute, until it becomes aromatic.
- Make the chicken in the back, on the wok. Mix it well with the vegetables.
- To Prepare the sauceIn a small bowl, whisk together the soy sauce, the oyster sauce (if using), sugar, corn starch, and water. Stir until the cornstarch is completely dissolved.
- Pour in the marinara sauce on the chicken and the vegetables in the wok. Cook, covered, for 2 to 3 minutes, stirring constantly, until the sauce thickens, and cover it well with the chicken and vegetables.
- Add the roasted peanuts and toss to coat. Cook for an additional 1 to 2 minutes.
- Finish with sesame oil toastedif you'd like, and mix it well.
- Garnish with chopped green onions just before serving, if desired.
Suggestions:
- Serve the Chicken and Plaid with white rice or brown rice.
