
Who doesn't like potatoes? Stir-fried, baked, roasted, mashed, there are many kinds of preparation. In addition to being a food filled with vitamins and delicious, it is also a food item, which we always have in the house don't you think? There is always a portion of one's chips on the bottom of that drawer in the fridge! So grab it and make a soup to warm for a day in the cold! Here's how to make a potato soup is super simple and quick:
Ingredients
- 4 medium potatoes (peeled and cut into small cubes)
- 1 medium onion (chopped)
- 2 cloves of garlic (finely chopped)
- 2 carrots (peeled and sliced into rings)
- 1 stalk of celery (finely chopped)
- 1 litre of chicken or vegetable (or water)
- 2 tablespoons of olive oil.
- 1 bay leaf
- Salt and pepper to taste.
- 1/2 cup sour cream (optional extra for a touch more cream)
- Chives, chopped, to decorate (optional)
Preparation:
- Peel and dice the potatoes, carrots, and celery. Set aside.
- Finely chop the onion and the garlic.
- In a large saute pan, heat the olive oil over medium-high heat.
- Add the onion and sauté over medium heat until translucent, about 5 minutes.
- Add the garlic and stir-fry for a further 1 minute.
- Add the potatoes, carrots, and celery to the pan.
- Stir well to combine with the onions and garlic.
- Put the bay leaf and pour in the broth, chicken or vegetable (or water).
- Allow the soup to a boil. Then, reduce heat to low and cook, covered, for about 20 to 25 minutes, or until the potatoes and carrots are tender.
- If you prefer to have a soup-more of a creamy dressing, then you can use a mix of soaking to get the soup until smooth. If you don't have a mixer, then transfer the soup in portions to a blender and puree, then return to the pan.
- If you want to, then add in the sour cream for a touch more smooth. Adjust salt and pepper to taste.
- Serve the soup hot, garnished with chopped green onions, if desired.
