Ingredients
- 500g of screw pasta (or penne, fusilli, etc.)
- 1 medium grated carrot
- 1/2 cup of sweet corn (can be canned)
- 1/2 cup peas (optional)
- 200g of diced ham (or shredded chicken)
- 1/2 red onion, chopped (optional, for an extra touch of flavor)
- 1 cup mayonnaise
- 1 tablespoon of olive oil
- Salt and pepper to taste.
- Chopped green onions to taste (parsley and chives)
Preparation:
- Cook the pasta in boiling salted water until al dente. Drain and run under cold water to stop the cooking process. Set aside.
- In a large bowl, mix the cold pasta with the other ingredients: carrots, corn, peas, ham, onion (if using), and chives.
- Add to mayonnaise and olive oil, mixing well until everything is well combined.
- Adjust the salt and black pepper according to your taste.
- Refrigerate for at least 30 minutes before serving. This helps enhance the flavors and makes the dish more refreshing.
Extra Tips
- If you want a lighter version, replace part of the mayonnaise with natural yogurt or ricotta cream.
- You can add olives, cherry tomatoes, pickled cucumber or even chopped green apple if you like a sweet and sour touch.
- Ideally prepare a few hours in advance to serve very cold.
