To macaroni It is a classic dish of Brazilian cuisine that combines the lightness of a salad with the substance of pasta. It is versatile, refreshing and perfect to accompany grilled meats or to be enjoyed alone. Even better when it is easy to prepare!

Ingredients

  • 500g of screw pasta (or penne, fusilli, etc.)
  • 1 medium grated carrot
  • 1/2 cup of sweet corn (can be canned)
  • 1/2 cup peas (optional)
  • 200g of diced ham (or shredded chicken)
  • 1/2 red onion, chopped (optional, for an extra touch of flavor)
  • 1 cup mayonnaise
  • 1 tablespoon of olive oil
  • Salt and pepper to taste.
  • Chopped green onions to taste (parsley and chives)

Preparation:

  1. Cook the pasta in boiling salted water until al dente. Drain and run under cold water to stop the cooking process. Set aside.
  2. In a large bowl, mix the cold pasta with the other ingredients: carrots, corn, peas, ham, onion (if using), and chives.
  3. Add to mayonnaise and olive oil, mixing well until everything is well combined.
  4. Adjust the salt and black pepper according to your taste.
  5. Refrigerate for at least 30 minutes before serving. This helps enhance the flavors and makes the dish more refreshing.

Extra Tips

  • If you want a lighter version, replace part of the mayonnaise with natural yogurt or ricotta cream.
  • You can add olives, cherry tomatoes, pickled cucumber or even chopped green apple if you like a sweet and sour touch.
  • Ideally prepare a few hours in advance to serve very cold.

Validity

Macaroni can be stored in the refrigerator for up to 3 days in a tightly sealed container. Avoid leaving it out of the refrigerator for too long to avoid compromising food safety.
