The urge to eat pizza can strike at any time, and we don't always have the time (or the inclination) to prepare a traditional dough and turn on the oven. That's where pan pizza: a practical, quick and delicious solution that is ready in minutes!

Made with simple ingredients, this dough doesn’t need to rest or rise. It’s ideal for quick snacks, light dinners or for involving the kids in a fun “pizza night” at home.

Dough Ingredients (makes 2 medium disks)

  • 1 cup (tea) of wheat flour
  • 1/2 cup (tea) of water
  • 1 tablespoon of oil
  • 1 teaspoon baking powder (the same used for cakes)
  • 1/2 teaspoon of salt

How to Prepare the Dough

  1. Mix the ingredients
In a bowl, add the flour, salt, yeast and oil. Gradually add the water, mixing until you form a smooth, slightly sticky dough that still comes away from your hands.
  2. Divide and roll out the dough
Divide the dough into two parts (or leave it whole for a large pizza). Using a rolling pin or your hands, roll it out into a circular shape, about 0.5 cm thick.
  3. Pre-bake in the pan
Heat a nonstick frying pan over medium heat. Place the open dough in it and cook for about 2 to 3 minutes on each side, until lightly golden. Prick with a fork to avoid bubbles.

Filling Suggestions

After pre-baking, keep the dough in the pan over low heat and add the filling of your choice. Here are some ideas:

Classic Margherita:

  • Tomato sauce
  • Mozzarella cheese
  • Sliced tomato
  • Fresh basil

Pepperoni:

  • Tomato sauce
  • Mozzarella
  • Sliced pepperoni
  • Onion in thin slices
  • Oregano

Chicken with catupiry:

  • Seasoned shredded chicken
  • Catupiry or cream cheese
  • Cheese
  • Corn (optional)

Vegetarian:

  • Tomato sauce
  • Cheese (or without)
  • Zucchini, grilled eggplant, cherry tomatoes and olives

Cover the pan for a few minutes, until the cheese melts and the filling heats through. Then serve!

Extra Tips

  • If you want a lighter dough, use half whole wheat flour.
  • For a vegan version, simply swap the filling for vegetables and use plant-based cheese or omit it.
  • You can also freeze the pre-baked dough and fill it later.
