Beans, Fat with Sausage and Pepperoni

The fatty beans with calabresa sausage This is the dish that truly conveys the flavor of Brazilian food: hearty, full of substance and perfect for gathering the family around the table. With simple and very tasty ingredients, this recipe transforms everyday beans into a complete, hearty meal full of personality. Perfect to accompany fresh rice, sautéed kale and, of course, some good homemade chili.

Ingredients (Serves 6 to 8 people)

  • 500g of carioca beans or purple beans
  • 2 smoked Calabrian sausages, sliced
  • 150g diced bacon
  • 1 large onion, chopped
  • 3 cloves of garlic, minced or crushed
  • 1 bay leaf
  • 1 chopped tomato (optional)
  • 1 tablespoon of tomato paste
  • Green smell to taste
  • Salt and pepper to taste.
  • Enough water for cooking

Preparation:

1. Cook the beans

Wash the beans well and place in a pressure cooker with enough water to cover (about 3 fingers above the beans) and the bay leaf. Cook for about 25 to 30 minutes after taking blood pressure. Book.

2. Prepare the “fat” stew

While the beans are cooking, fry the bacon in a large pan until it has rendered a lot of fat and is golden brown. Add the calabresa sausage and fry until golden brown. Add the onion and garlic and sauté until wilted.

3. Finish the seasoning

Add the chopped tomatoes (if using) and tomato paste. Sauté for 2 minutes and then add the cooked beans with part of the broth. Let it boil over medium heat for 15 to 20 minutes, stirring occasionally, until the broth thickens.

4. Adjust and serve

Season with salt, black pepper and finish with parsley. Serve hot with white rice, sautéed cabbage, flour or pork rinds.

  • Homemade pepper or vinaigrette

Wood Stove Tips

  • If you want to make it even more complete, add desalted dried meat or smoked pork ribs.
  • To thicken the broth naturally, mash some of the grains with the ladle during the final cooking.
  • Beans are great for freezing! Make a larger quantity and freeze portions.
