Cheese bread is one of the favorites of Brazilian cuisine, crispy on the outside, soft on the inside and irresistibly tasty. But for those looking for a healthier version, with fewer carbohydrates and more protein, fit cheese bread with whey protein is the ideal choice. This recipe maintains the classic flavor, but gains a nutritional boost for those who are focused on a more balanced diet.

Why include whey in cheese bread?

Adding whey protein to the recipe increases the protein value, which helps in satiety, in gaining lean mass and in muscle recovery — great for those who train or just want to improve the quality of their meals.

Ingredients

  • 1 cup of sour cassava starch
  • 1/2 cup grated cheese (half-cured, parmesan or light mozzarella)
  • 1 scoop (30g) of unflavored or neutral flavored whey protein
  • 1 egg
  • 2 tablespoons of natural yogurt or light cream cheese
  • 1 tablespoon of olive oil
  • 1 pinch of salt (adjust according to the cheese)
  • 1 teaspoon baking powder (optional, for more softness)

Preparation:

  1. Pre-heat the oven to at 180 °C.
  2. In a bowl, mix the tapioca flour, whey protein and salt.
  3. Add the egg, olive oil, yogurt and grated cheese. Mix well until a homogeneous dough forms.
  4. If you want a lighter texture, add the yeast last.
  5. Shape into balls with greased hands or with the help of a spoon.
  6. Place on a lightly greased baking sheet or lined with parchment paper.
  7. Bake for 20 to 25 minutes, or until lightly golden.

Tips and Variations

  • Freezing: You can freeze the balls raw and bake them directly from the freezer whenever you want.
  • Low carb version: Use parmesan cheese and reduce the amount of tapioca starch, increasing the amount of whey and cheese to bind.
  • More flavor? Add fine herbs, turmeric or seeds to the dough.
  • Flavored whey? Avoid sweet flavors. Choose flavorless or neutral flavors so as not to interfere with the result.
