Ingredients
For the pasta
- 1 cup rice flour
- 1/2 cup oatmeal (or whole wheat flour if you don't need gluten-free)
- 1/2 cup mashed sweet potato (or regular potatoes, boiled and mashed)
- 1/2 cup water (or more, if necessary)
- 1 tablespoon of olive oil
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- Pepper to taste
For the filling
- 300 g shredded chicken breast (cooked and seasoned)
- 1 small onion, chopped
- 2 chopped garlic cloves
- 1/2 red bell bell pepper, chopped
- 1/2 grated carrot
- 1/2 cup chopped green or black olives (optional)
- 1/4 cup chopped parsley
- 1 tablespoon of olive oil
- Salt and pepper to taste.
For breading
- 1 egg white (or 2 tablespoons of vegetable milk if you prefer an egg-free option)
- 1 cup wholemeal breadcrumbs (or oatmeal for a gluten-free option)
Instructions
Preparing the filling
- Sauté the vegetables: Heat the olive oil in a frying pan over medium heat. Add the onion and garlic and sauté until they are soft and golden.
- Add the other ingredients: Add the peppers, carrots and olives (if using) and sauté for a few more minutes. Add the shredded chicken breast and parsley. Season with salt and black pepper to taste. Cook for a few more minutes, stirring well to combine the flavors. Set aside and allow to cool slightly.
Preparing the dough
- Mix all of the ingredients: In a bowl, combine the rice flour, oatmeal, mashed sweet potato, olive oil, baking powder, salt and black pepper. Gradually add water until the dough is homogeneous and of a consistency that you can shape.
- Shape the drumsticks: Take small portions of the dough and roll it out with your hands or a rolling pin into small disks. Place a spoonful of the filling in the center of each disc. Close the dough around the filling and shape into a drumstick, pinching the edges to seal.
Baking and roasting
- Bread it: Dip each drumstick in beaten egg white (or vegetable milk) and then in wholemeal breadcrumbs (or oatmeal). Make sure they are well coated.
- To bake: Preheat the oven to 200°C. Place the drumsticks on a greased baking sheet or one lined with baking paper. Bake for about 25-30 minutes, or until they are golden and crispy. You can turn them halfway through to ensure they are evenly browned.

- If you prefer an even lighter version, you can choose to steam the drumsticks or use an air fryer.
