The granulated tapioca pudding It is a dessert that combines simplicity, flavor and that rustic touch that reminds us of country cooking. Made with accessible ingredients and without the need for an oven or bain-marie, this pudding has a unique texture, slightly crunchy on the outside and soft on the inside, thanks to the cassava (tapioca) pellets, which absorbs liquids and turns into an irresistible sweet.

This recipe is ideal for hot days, family lunches or any occasion when you want to offer a special dessert, without complications.

Ingredients

  • 1 cup (tea) of granulated tapioca (not the fine tapioca made in a frying pan)
  • 500 ml of hot milk
  • 1 glass of coconut milk (200 ml)
  • 1 can of condensed milk (395 g)
  • 1/2 cup (tea) of sugar (optional, to make it sweeter)
  • 1 pinch of salt
  • Shredded coconut (optional, to mix or decorate)

For the syrup (optional):

  • 1 cup (tea) of sugar
  • 1/2 cup (tea) of water

Preparation:

1. Hydrate the tapioca

In a large bowl, place the granulated tapioca and add the hot milk. Mix well and let sit for about 30 minutes, stirring occasionally, until the tapioca absorbs the liquid and swells.

2. Mix the ingredients

Once the tapioca is hydrated, add the coconut milk, condensed milk, sugar (if you want a sweeter pudding) and salt. Mix well until smooth. If desired, add grated coconut to add more flavor and texture.

3. Prepare the syrup (optional)

In a saucepan, melt the sugar over medium heat until it forms a golden caramel. Carefully add the water and stir until it dissolves well. Pour the syrup into a pudding mold (or a round mold with a hole in the middle) and spread it out.

4. Assemble the pudding

Pour the pudding mixture into the caramelized mold (or directly into a baking dish if you don't want to use syrup). Smooth the surface with a spoon and refrigerate for 4 hours or until firm.

5. Unmold and serve

If it is in a mold with syrup, carefully unmold it. Serve cold, plain or with more grated coconut on top.

Tips and Variations

  • For an even richer flavor, add 1 teaspoon vanilla extract or lemon zest.
  • The syrup is optional, but it makes the pudding look like a party dessert.
  • You can put it in individual jars to serve as a sweet in a jar.
  • The pudding is also great with a red fruit or passion fruit sauce.
