Tapioca starch cake is a true delicacy of Northeastern cuisine, which has won over palates with its soft texture and irresistible flavor. Made with tapioca, it is naturally gluten-free, making it an excellent option for those looking for a delicious and inclusive snack or dessert. If you are looking for a simple recipe that is full of flavor, tapioca starch cake will be the perfect choice for you.

Ingredients:

  • 500g tapioca starch
  • 200ml coconut milk
  • 200ml of milk
  • 200g sugar
  • 4 eggs
  • 100g melted butter
  • 1 teaspoon baking powder
  • 1 pinch of salt
  • 1 teaspoon vanilla essence (optional)

Directions:

  1. Preparing the dry ingredients: In a large bowl, combine the tapioca starch, sugar, baking powder, and salt. Mix well to ensure the ingredients are well incorporated.
  2. Mixing the liquids: In another bowl, beat the eggs with the milk, coconut milk, melted butter and, if desired, vanilla essence. Make sure all the liquids are well mixed.
  3. Combining the ingredients: Make a well in the center of the dry ingredients and gradually pour in the liquid mixture, stirring well with a wooden spoon or whisk until the dough is smooth and lump-free.
  4. Baking the cake: Preheat the oven to 180°C. Grease a medium-sized baking tin (round or rectangular) with butter and flour or, if you prefer, use baking paper. Pour the batter into the tin and smooth the surface with a spatula.
  5. Finishing: Bake for approximately 40-45 minutes or until the cake is golden brown and firm to the touch. You can test if the cake is cooked by inserting a toothpick into the center: if it comes out clean, it's ready!
  6. Let it cool: Remove the cake from the oven and let it cool for a few minutes before unmolding. Serve warm or at room temperature.

Tips for the Perfect Tapioca Gum Cake:

  • Texture: If you prefer a moister cake, you can add a little more coconut milk or regular milk to the batter. This will make the cake even softer.
  • Additional aromas and flavors: Try adding shredded coconut to the batter or even a little ground cinnamon for an extra touch of flavor.
  • Cake shape: Tapioca starch cake is delicious in both round and rectangular pans. The choice of pan can only affect the cooking time (larger pans generally cook faster).

How to Serve

Tapioca starch cake is delicious for breakfast or as an afternoon snack. It is also a great option to serve at parties and get-togethers with friends and family. For a special touch, serve it with a fresh cup of coffee or even fruit jelly.

A Gluten Free Delight

Because it is made with tapioca starch, this cake is naturally gluten-free, which makes it an excellent alternative for people with gluten intolerance or who follow a gluten-free diet.

With this simple and flavorful recipe, tapioca starch cake will delight all palates and become a favorite in your home. Try it and share this delicious treat with your friends and family!
