Ingredients

For the Cake:

  • 1 cup wheat flour
  • 1/2 cup sugar
  • 1/4 cup vegetable oil (or other oil of your choice)
  • 2 eggs
  • 1/2 cup orange juice (approximately 2 oranges)
  • Zest of 1 orange
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 pinch of salt

For the Cover (optional):

  • 1/2 cup powdered sugar
  • 2-3 tablespoons orange juice (adjust consistency)

Instructions

  1. Prepare the Dough:
    • In a large bowl, sift together the flour, baking powder, baking soda, and salt. Set aside.
    • In another bowl, beat the eggs with the sugar until you get a creamy mixture.
    • Add the oil, orange juice and orange zest to the egg mixture and mix well.
    • Gradually add the dry ingredients to the wet mixture, stirring until the batter is smooth.
  2. Preheat Air Fryer:
    • Preheat the air fryer to 160°C for 5 minutes.
  3. Prepare the Form:
    • Use a small pan that will fit in the air fryer basket (a 6-7 inch cake pan is ideal). If you don't have a non-stick pan, grease it with butter and sprinkle with flour or use parchment paper to make it easier to remove the cake.
  4. Pour the Batter and Cook:
    • Pour the batter into the prepared tin.
    • Place the cake pan in the air fryer basket and cook at 160°C for 20-25 minutes. The time may vary depending on the model of your air fryer and the size of the pan. Do the toothpick test: insert a toothpick into the center of the cake; it should come out clean when the cake is done.
  5. Prepare the Topping (optional):
    • While the cake is cooling, you can prepare the frosting. In a small bowl, whisk together the powdered sugar and orange juice until the frosting is thick but runny.
    • If desired, pour the frosting over the cooled cake.
  6. Finish and serve:
    • Allow the cake to cool completely before unmolding.
    • If you made the frosting, spread it over the cake after it has cooled.

Tips

  • For an extra touch of flavor, you can add a little vanilla essence or a little spice like cinnamon to the dough.
  • If you prefer, you can add pieces of candied orange or walnuts to the dough for a special touch.
