Pea soup

Peas are a legume that has health benefits such as preventing constipation, regulating blood sugar, promoting weight loss and improving eye health. Now imagine being able to enjoy all these benefits while having a nice soup on a cold night? Pea soup is delicious and has a creamy texture and rich flavor. Learn how to make this dish to serve to guests and family.

Ingredients

  • 2 xícaras de ervilha seca (deixe de molho por pelo menos 4 horas ou de um dia para o outro)
  • 1 medium onion, chopped
  • 2 cloves of garlic, finely chopped
  • 2 carrots, medium-sized, chopped into small cubes
  • 2 medium potatoes, chopped into small cubes
  • 1 stalk of celery (celery root), chopped
  • 1 large tomato, chopped
  • 1 litro de caldo de galinha ou de legumes  (ou água)
  • 2 tablespoons vegetable oil or olive oil
  • 1 bay leaf
  • 1 teaspoon cumin (optional)
  • Salt and pepper to taste.
  • 1/2 cup parsley (parsley and chives), chopped into the end
  • Of Bacon or sausage and pepperoni (optional), sliced (to add flavor and to add a special touch)

Preparation:

  • Drain the peas they got in the sauce, and set aside.
  • In a large saute pan, heat the olive oil or olive oil over medium-high heat.
  • Add the onion and garlic and sauté over medium heat until they are soft and lightly browned.
  • If you're using bacon, or sausage and pepperoni, you can add them to the pan and stir-fry until they are golden brown.
  • Add the tomatoes, carrots, potatoes and celery. Stir-fry for a few minutes.
  • Stir in the peas, drained, and mix it in with the other ingredients.
  • Pour in the chicken stock, or vegetable (or water) to the pan and add the bay leaf.
  • Raise the heat until it starts to boil, then reduce heat to medium-low.
  • Simmer the soup for about 40-50 minutes, or until the peas are good soft opening. Stir it from time to time.
  • If you want the soup a creamier, you can use a mix of the immersion process, the partially-in the soup, or mash some of the peas with a fork.
  • Season with salt, pepper, and cumin (if using).
  • Remove the bay leaf.
  • Add the parsley, chopped, and stir to combine.
  • Serve the soup hot, and if you wish, serve it with fresh bread or toast.
