For the chicken rice soup is a traditional soup from brazil, known for being light, and nourishing. It's great for those days you cold, or just when you want to have a meal, warm, and comforting. Here is a classic recipe for you to prepare:
Ingredients
- 1 whole chicken or 500g chicken breast, cut into cubes
- 2 tablespoons of olive oil.
- 1 medium onion, chopped
- 2 cloves of garlic, finely chopped
- 2 carrots, medium-sized, cut into slices
- 1 stalk of celery (celery root), finely chopped
- 1 bay leaf
- 1 cup of rice can be white or whole grain
- 1 litre of chicken stock or water
- Salt and pepper to taste
- 1/4 cup parsley, or chives for a finishing
- The lemon, optional, for serving
Preparation:
- Prepare the chicken: If you are using a whole chicken, cut it up into smaller pieces. If you are using chicken breast, cut into small cubes. Season the chicken with salt and pepper, to taste.
- Many of the spices and seasonings: In a large saute pan, heat the olive oil over medium-high heat. Add the onion and garlic and sauté over medium heat until they are soft and translucent, about 5 minutes.
- Add the chicken: Add the chicken to the pan and cook until they begin to brown, about 5 to 7 minutes.
- Add the vegetables and the broth: Add the carrots, parsley, and bay leaf. Mix well and then add in the chicken broth (or water). Bring to a boil, then reduce heat to low and cook, covered, for about 30 minutes, or until the chicken is thoroughly cooked and vegetables are tender.
- Add the rice, Remove the chicken from the pan and desosse (if applicable), unraveling the meat into bite-size pieces. Return the shredded meat to the pot. Add the rice and cook for a further 15-20 minutes, or until the rice is tender and has absorbed a part of the liquid.
- Finish the soup: Adjust salt and pepper to taste. Discard the bay leaf. If you want to, then add the parsley or green onions, chopped, to give a fresh touch.
- To serve: Serve the chicken hot, with lemon juice if you like. Lemon juice can be squeezed into the soup for an extra touch of flavor.
