Ingredients

For the cake:

  • 3 medium carrots, peeled and sliced
  • 1/2 cup oil
  • 3 eggs
  • 2 cups of sugar
  • 2 cups of wheat flour
  • 1 tablespoon baking powder
  • 1 pinch of salt

For the chocolate icing (optional):

  • 1/2 cup milk
  • 2 tablespoons butter
  • 4 tablespoons of chocolate powder
  • 1 cup sugar

Preparation:

1. Preparing the dough

  • Blend the ingredients in a blenderIn a blender, add the chopped carrots, oil and eggs. Blend well until the mixture is homogeneous, with a liquid texture and no large chunks of carrot.
  • Add the sugarAdd the sugar and beat again until the mixture is well blended.
  • Add the dry ingredientsThen add the wheat flour, salt and baking powder. Beat in the blender for a few seconds just to incorporate the ingredients. Don't over-beat so as not to lose the lightness of the dough.
  • Consistency of the doughThe dough will be a little liquid, which is normal. This will ensure that the cake is very fluffy.

2. Baking the cake

  • Pre-heat the oven toBefore putting the cake in the oven, preheat it to 180°C for about 10 minutes.
  • Greasing the panGrease a cake tin approximately 22 cm in diameter with butter and flour, or if you prefer, use baking paper to make it easier to remove the cake after baking.
