If there is a meat that represents the true root barbecue, that meat is the termite. A typical cut of zebu beef, hump is known for its fibers interspersed with fat, which guarantees a deep flavor and an extremely succulent texture when well prepared. Ingredients

  • 1 piece of hump (2 to 2.5 kg)
  • Coarse salt to taste
  • 4 crushed garlic cloves
  • 1 grated onion
  • Juice of 1 lemon
  • 2 tablespoons mustard
  • Pepper to taste
  • 1 teaspoon cumin (optional)
  • Aluminum foil (in large quantities)

Preparation:

1. Prepare the seasoning

Mix the garlic, onion, lemon, mustard, pepper and cumin. Make holes in the hump with a knife and rub the seasoning all over the meat, including the holes. Leave to marinate in the refrigerator for at least 6 hours, ideally overnight.

2. Wrap carefully

Remove the hump from the marinade and wrap it in two or three layers of aluminum foil, so that it is well sealed to retain the juices and cook slowly.

3. Place on the grill with indirect heat

Place the piece in a part of the grill where the fire is not direct (indirect fire). Use strong coals on the sides and keep the grill higher. The hump should cook slowly and patiently for about 4 to 5 hours, turning from time to time to ensure even cooking.

4. Finishing on the grill

After this time, carefully remove the aluminum foil (be careful with the hot steam!) and return the hump to the grill, now over direct heat, just to cook. brown and caramelize the outside, for 10 to 15 minutes. Brush with some of the marinade or fat from the meat to further enhance the flavor.

Tips for a Perfect Termite

  • The longer it is roasted slowly, the more the collagen in the meat dissolves, ensuring tenderness.
  • If you want to add a smoky touch, throw pieces of fruit wood (like orange wood) into the coals.
  • For an even juicier version, add a little beer or beef broth inside the aluminum foil.
